My husband and I took what we loved from our mother's potato soup recipes and came up with our on version.
2 cups chicken broth
2 cups water
2 cups milk
cooked bacon, crumbled
½ medium white onion, chopped
flour and cold water (to thicken)
8 ounces sour cream
8 ounces American cheese

Bring potatoes, chicken broth, water and milk to a boil. Cook until potatoes are soft. Add the onion while above is boiling. Add flour and water to thicken. Add sour cream and cheese. Cook until melted. Add crumbled bacon and serve.
