Scaredy Carrots

Great for Halloween! The idea is to say these carrots were so scared when they saw a ghost that they turned white! Hence, "Scaredy Carrots" title.




1.5-2 lbs parsnips 1 cup chicken broth salt

Preheat oven to 350 Peel each parsnip and cut into strips (or quarters) Lay in a baking dish in one layer, add chicken broth and season with salt Cover and bake 20-25 minutes Uncover and bake at 400 for 10 minutes or until browned.
