Baked potato casserole side dish




6 medium potatoes ¼ cup butter 2 cups cheddar cheese, shredded 2 cups sour cream ⅓ cup scallions, chopped 1 teaspoon salt ¼ teaspoon pepper 2 tablespoons butter

Cook potatoes in skins, then chill. Peel and grate potatoes in large bowl. Over low heat combine butter and cheese until almost melted. Remove from heat and blend in sour cream, scallions and seasonings. Pour cheese mixture over potatoes and stir to blend. Put into a greased casserole and dot with 2 tablespoons butter. Bake at 350 for 45 min. This side is an easy do ahead dish. I usually use the food processor to grate the potatoes and cheese. You can lighten the calorie content by using low fat sour cream.
