Pork Soup





2 cans of diced tomatoes
1 can of Rotel
1 small can of Green Chili
2 cloves of garlic
1 can of water
1 Lime Pork Country Ribs (1.5-2.5 pounds depending of your preference)

Cut country pork ribs into chucks or squares throw seasoning, to your taste, (onion powder, paprika, salt, pepper, Old Bay and cilantro) over the pork and cook in large skillet. When brown and done the skillet will be dry after sizzling up liquid before the done stage. Slide pork into slow cooker, adding the above ingredients. Cook slow for 8 hrs; I'm a big believer in low and slow! You can also add barley or rice to balance this dish to your tastes. Ladel into a bowl with some buttery tortillas or corn bread on the side. It's extra delicious and warming on a cold day!
