Cucumber Soup with Walnuts

Cold herbed Cucumber Soup with Walnuts. Great in warm weather.

Ingredients

1 English Cucumber,peeled, seeded and cut in half 1&½ cups low fat Yogurt 1&½ cups Buttermilk ¼ cup chopped parsley 1 Garlic clove chopped (fine) 2 Tbls. chopped chives (fine) 2 Tbls. chopped Dill (fine) ½ cup chopped Walnuts (coarse) salt & pepper Garnish--- 2 more Tbls. chopped Walnuts

Instructions

Puree ½ the cucumber in a processor In a medium bowl blend yogurt and buttermilk and add pureed cucumber, parsley, garlic, chives, dill and 2 Tbls. of walnuts and mix. Chop 2nd half of cucumber into ⅛ inch pieces and add to bowl. Add Salt and pepper to taste. Chill and serve, add walnuts on top of each serving.
