This recipe yields 5 to 6 mini gingerbread houses to perch on coffee or hot cocoa cups for the holidays.




2 cups all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda 1 teaspoon cinnamon ¼ teaspoon nutmeg or allspice ¼ teaspoon cloves 2 teaspoons ground ginger ¼ teaspoon salt 1 egg ½ cup plus 2 tablespoons butter ¼ cup molasses ½ cup brown sugar

Cream butter and sugar, add in egg and molasses then dry ingredients; wrap and chill dough for a few hours before rolling out thinly between wax paper. House instructions: Make a little cardboard cutout of the front (will also be used for the back), little wall cutout (you'll need 2 squares per house) and a longer rectangle for the roof panels (you'll need 2). Bake at 350 for 10 to 15 minutes or until walls are well done and not soft. I eyeballed my houses; for a more accurate little house, maybe break out a ruler or look up templates/complicated instructions online ;) Royal Icing: This is fool-proof: Mix 1 lb (4 cups) powdered sugar with ½ teaspoon cream of tartar and 3 egg whites. Whip at high speed at least 7 minutes and keep covered when not decorating (hardens and dries quick). Decorate as desired!
