Salmon burgers - home made with fresh salmon and veggies"
1.5 lbs Fresh salmon (skin removed)
1 red pepper diced
1 scallion chopped
1/4 cup chopped carrots
2 tbs lemon juice
2 tbs soy sauce
1 tbs minced ginger
1 clove garlic minced
1 tsp Dijon mustard
Salt and pepper
Dice salmon in small chunks and place in mixing bowl. Add red pepper, scallion, carrots, lemon juice, ginger, Dijon mustard, and salt and pepper. Stir to mix all ingredients. Let marinate for 10 minutes. Add egg and some bread crumbs. Form burger patties. Coat lightly with some more bread crumbs. Lightly sauté burgers in pan with olive oil. Cook until browned on one side. Flip. Brown other side. Serve on top of a salad or on a toasted bun with some oven roasted potatoes and steamed broccoli . Enjoy!
