entered Raspberry-Glazed Rosemary Chicken

I came up with this recipe as a way to use early spring produce. The three main ingredients come into season at the same time and they seem complement each other really well. The toasted walnuts give the salad a rich, earthy flavor that ties it all together."


2 tablespoons Italian seasoning blend
8 skinless, boneless chicken breast halves
1/4 cup fat-free chicken broth
1 cup raspberry preserves
1 tablespoon honey mustard


Preheat oven to 350 and coat a 9X13 inch baking dish with non-stick cooking spray. Rub one side of each chicken breast with Italian seasoning mix. Place chicken seasoned side up in a baking dish, pour broth over the chicken. Bake in preheated oven for 20 minutes. Place raspberry preserves in a microwave-safe bowl and heat for 20 to 30 seconds to soften and stir in honey mustard. Spread preserve mixture over each breast. Bake 10 minutes more.
