2 cups cornmeal, "Harina PAN"
2 cups water
3 tsp. salt
1 tsp. baking powder
1 lb. chicken breast
100 grams of finely chopped onion
200 grams of mayonnaise
salt and pepper
In a bowl place the flour "Harina PAN", salt, vegetable oil and water. Mix with your hands to form a dough. Then knead for about 10 minutes.
Wet hands with water and take a piece of dough and make small balls and flatten with palms. Repeat until you have used all the dough.
Place the arepas on a hot pan and brown well on both sides. Finish cooking in the oven for 20 to 25 minutes.
For the filling:
Cook the chicken breasts. Once cooked, cut into small pieces.
Chop the onion finely.
Place all these ingredients in a bowl and add the mayonnaise. Mix to incorporate all ingredients and season with salt and pepper
Cut and fill hot arepas with chicken.
