Sweet Potato Pancakes
Makes about 25 silver dollar pancakes
The silver dollar size is perfect for little, or big, fingers to grab.
Ingredients
- 1 medium sweet potato, peeled, cooked and mashed (1½ cups mashed)
- 3 tablespoons unbleached all-purpose flour
- 1 large egg
- ½ teaspoon kosher salt
- 1 to 2 tablespoons olive oil
Preparation
- Put all ingredients into a large mixing bowl and stir together until smooth.
- Preheat the Griddler to 350°F. Using the open griddle position, brush the plates with the oil. Once the oil is hot, drop pancake mixture by 1 tablespoon per pancake, evenly spaced across the griddle plates. Press down on top to flatten slightly. Cook about 3 minutes per side, or until golden brown on both sides.
- Repeat with remaining pancake mixture, brushing again with oil. Keep warm on a rack in a 200°F oven.
