Oatmeal Blueberry Baby CakesUser Submitted Recipe
Full of great, healthy ingredients!
1 cup old fashioned oats
1 tsp baking powder
1/2 tsp sea salt
2 Tbs brown sugar
1 tsp vanilla extract
2 large eggs
3/4 cup plain Greek yogurt
4-6 Tbs warm water
1/2 cup blueberries (fresh or thawed)
1. In a food processor, process oats until coarse flour is formed and then add in the baking powder, salt, and brown sugar: pulse until combined.
2. Add in the vanilla, eggs, and greek yogurt; process until combined. Add in small amounts of water until the batter becomes loose so that it will spread easily.
3. Coat a hot griddle or frying pan with butter and drop batter onto it by the heaping tablespoonful. Quickly plop 3-5 blueberries on top of each pancake right after you have poured the batter into the pan. The little baby cakes are ready to flip when the first side has browned. After the second side has browned, serve and enjoy.
