Cheese Straws

Crisp, buttery, cheesy straws with a touch of spice"


4 oz flour
3 oz strong grated cheddar cheese
2 oz butter
1 yolk egg
pepper, salt, cayenne


Mix the flour, cheese, salt, cayenne pepper and pepper together. Rub in the butter until the mixture is crumbly. Add the egg yolk and mix to a short paste. Kneed well until smooth. The mixture should be quite dry. Roll out to 1/4 inch thick. Cut into strips (to look like french fries). Bake for 20 - 30 minutes in a moderate oven (340-370).
