1½ pounds zucchini, trimmed

Instructions

Assemble Cuisinart® food processor with 4mm slicing blade. Slice zucchini and place in a steamer basket to fi t a 3- to 4-quart saucepan filled with one inch of water. Place a tight fitting lid on pan and place over high heat. When liquid comes to a boil turn heat down to medium. Steam zucchini for about 15 minutes, until extremely soft. Place steamed zucchini in the Cuisinart® work bowl fitted with metal chopping blade. Process for 20 seconds. Scrape work bowl. Process for an additional 20 seconds until desired consistency is reached. Allow mixture to cool. Store in refrigerator in airtight container for up to 3 days or fi ll ice cube trays or other 1-ounce containers to freeze.
