Make a big pot of this stew for family or friends. You may not have any leftovers!
1 bag brown lentils, rinsed thoroughly and drained
½ large white onion, chopped
2 celery stalks, diced
4 large carrots, chopped
1 Tbsp olive oil
2 cloves garlic, chopped small
32 oz (1 carton) chicken or vegetable broth
½ bunch bok choy, slice greens and chop whites
1 pkg smoked sausage or kielbasa
1/ 2 can black beans, rinsed thoroughly
1½ teaspoon cumin
½ teaspoon dried oregano
½ teaspoon sea salt
1 teaspoon cracked blaqck pepper
1 teaspoon hot sauce

In Dutch Oven saute onions, celery and garlic for 3 min. Add sausage and brown for 3 min. Add carrots and stir for 2 min. Add lentils, black beans, broth, spices, salt and pepper, hot sauce and bok choy, stir and bring to a boil. Lower heat to simmer and cook for 45 min. Add water if necessary if it gets too thick or veggies aren't covered by broth.
