Smashed red potato salad Caramelized red onions bring this salad over the top Prep time: 10 minutes Cook time: 25 minutes Servings: 4 Ingredients: 6 red potatoes 1 large red onion 1 1/2 teaspoon salt 1/2 teaspoon black pepper 1/4 cup apple cider vinegar 4 table spoons sour cream 2 teaspoons coarse grain Dijon mustard 1/2 bunch of dill (finely chopped) Directions: 1. Wash potatoes and put in a pot of water. Bring to boil and cook until fork tender. 2. Peel and chop onion into thin strips. Heat a table spoon olive oil with a teaspoon of butter in a skillet until hot. Sautee onions until they are golden brown and caramelized. Pour cider vinegar over onions. Transfer to a bowl, add the rest ingredients, salt, pepper and mix. 3. While potatoes are still warm, pour over the dressing mixture and smash with a potato masher, then mix thoroughly with a spoon. Serve warm or cold. Caramelized red onions bring this salad over the top. Great side dish on a dinner table.
