This salad takes on a lot of flavor from caramelized red onions. Great accompaniment on a dinner table.
6 red potatoes
1 large red onion
3 table spoons sour cream
1½ teaspoon salt
½ teaspoon black pepper
2 teaspoons coarse grain Dijon mustard
¼ cup apple cider vinegar
½ bunch dill (finely chopped)
1 teaspoon garlic powder

1. Boil potatoes in a pot of water until fork tender.
2. Meanwhile, prepare the dressing. Peel an onion and cut into thin strips. Heat a table spoon of vegetable oil in a skillet until hot. Sautee onions with a pinch of salt until browned and caramelized, for 8-10 minutes. Turn off the heat, add cider vinegar, stir and let it cool. Add the rest of the dressing ingredients to the skillet and mix together.
3. Drain water from potatoes and while they are warm smash them with a potato masher. Add the dressing and mix thoroughly for all flavors to combine. Serve warm or cold.
