Haricoverts with Caramelized Shallots and Bacon

An easy and delicious side dish that works anytime of the year.




1 bunch of Haricoverts or Green Beans (if you can't find them)
2 large shallots, sliced thinly
8 pieces of bacon, cut into small pieces
1 Tbps of extra virgin olive oil
1 Tbsp of butter
1 Tbps of olive oil
Kosher salt
Freshly ground pepper

Fill a large pot with water and bring to a boil. Place a large bowl with ice and fill it with water. Place haricoverts in boiling water to blanch for about 1-2 minutes. Strain and place them in the ice water. (This will ensure they retain their green color). Meanwhile, brown the bacon in a medium high temperature, then remove and place in a small bowl with a paper towel to soak up the fat. Keep one Tbsp of the bacon fat. Wipe down any loose browned bacon pieces from the pan and return the bacon fat and olive oil. Add shallots to pan and sprinkle with salt and pepper. Caramelize the onions slowly. Remove shallots to a separate bowl. (Bacon, shallots and haricoverts/green beans can be prepared to this point the day before). Warm pan large enough to fit all the ingredients. Add 1 Tbsp of butter and olive oil to pan. Once butter has melted, add haricoverts to pan. Adjust seasoning with salt and pepper. Top with warmed shallots and bacon.
