1 tray of ground turkey
1 yellow bell pepper and 2 red bell peppers
1 cup shredded sweet potato (without skin)
1 can organic diced tomato
½ cup chopped cilantro
½ teaspoon garlic salt
1 teaspoon oregano
1½ teaspoon cumin
1 Tbs olive oil for cooking
Optional: ½ cup shredded mozzarella cheese
Serving Suggestion: Add 2 cups of spinach to mixture for more greens!

Preheat oven to 400 degrees. Then, wash bell peppers and slice in half length-wise. Take seeds out and discard. Then lay bell peppers in a greased Pyrex dish. Next, wash and shred sweet potato, and dice cilantro.
Add olive oil to pan and set heat to low/medium. Next, add ground turkey and sweet potatoes to the pan and cook for about 5-7 minutes until turkey meat is white. Then, add seasonings, cilantro and tomato sauce to pan. Cook on medium heat for another 5-6 minutes stirring throughout until mixture thickens. Turn heat off.
Serving Suggestion Directions: Add 2 cups of spinach and stir into mixture. Put lid on to wilt leaves.
Next, using a spoon add mixture into bell peppers to fill just above the top edge. Bake for 30-35 minute. You should be able to pierce bell pepper with a fork once it is cooked.
Optional: Sprinkle mozzarella cheese over top of bell peppers while they are still hot.
