Spicy Shrimp Creole

A spicy cajun creole dish that is flavorful and is like Mardi Gras in your mouth.....fun and exciting. If you ever want a meal to spice up your day, try this Spicy Shrimp Creole..you will absolutely LOVE IT! Meal is cooked in about 1 1/2 hours.

2 Tbsp. butter

1 c. chopped green bell pepper

1 c. chopped onion

2 (14 ½ oz.) cans tomatoes with juice

2 teaspoon. chopped garlic

2 teaspoon. chopped parsley

3 bay leaves

1 lg. Tbsp. tomato paste + ½ teaspoon. sugar

2 c. V8 juice

½ c. Rotel

½ teaspoon. oregano

½ teaspoon. lemon pepper

Garlic Tabasco--a few drops

2 lbs. peeled raw shrimp

3 Tbsp. butter

Salt & cayenne to taste

½ c. chopped shallots

In a large cooking pot, put 2 Tbsp. butter. Put pot on stove over medium-low heat. Add the bell pepper and onions and saute'. Next, add the tomatoes, juice, tomato paste + sugar and remaining seasonings. Stir well. Add V8 juice, Rotel, oregano, lemon pepper and the garlic Tabasco. Blend well, cover and simmer about 1 hour, stirring occasionally.

After the sauce has simmered about an hour, in a skillet, melt 3 Tbsp. butter. Season butter with salt and cayenne pepper. Add raw shrimp and saute' shrimp about 15 minutes on medium-low heat stirring constantly. Then, add this to the sauce along with the green onions and continue to cook for about 10-15 minutes. Serve over hot rice.
