Great way to get kids to eat fresh fruit. Can be served as a desert by placing a scoop of vanilla ice cream over the fried fruit.

1 cup Aunt Jemima Buttermilk complete pancake mix
½ cup water
½ teaspoon vanilla
1 tablespoon powder sugar to add to mix
1 tablespoon powder sugar to sprinkle on top after frying
1 banana, sliced in one inch slices
1 apple, sliced up
½ cup strawberries, sliced in two pieces
1 cup coconut oil
1 cup canola oil

Mix pancake mix, water, vanilla and 1 tablespoon powder sugar in a bowl. Take sliced fruit and place in pancake mixture to coat well.
In small pan, heat up coconut and canola oil till hot, about 320 degree.
Carefully drop coated fruit into hot oil to fry. When bottom looks brown, turn over and cook until nice and golden brown on both sides (about 1 to 2 minutes). Remove from oil and drain on paper towels. When cooled, sprinkle powder sugar on top and serve. Kids will love eating their fruits this way.
