The smokiness of the chipotle not only adds a lot of flavor (and some heat), but an unexpected richness to the dish, making this a filling, but healthy, chili.

Ingredients

  • 2cups dried beans, soaked overnight,
  • then drained (a mixture of beans works
  • well for this dish – black, kidney, navy,
  • adzuki, garbanzo, etc.)
  • 1tablespoon olive oil
  • 1½-inch piece fresh ginger, peeled and
  • finely chopped
  • 2garlic cloves, finely chopped
  • 1small onion, finely chopped
  • 1teaspoon kosher salt, divided
  • ¼teaspoon freshly ground
  • black pepper, divided
  • 1bell pepper (yellow or green preferably,
  • for color), cored, seeded and diced
  • 2teaspoons chili powder
  • ¼teaspoon ground cumin
  • ¼teaspoon ground cinnamon
  • 1can (28 ounces)
  • diced tomatoes, drained
  • 2tablespoons tomato paste
  • 1chipotle in adobo sauce, puréed with
  • additional 1 teaspoon adobo sauce
  • 2cups vegetable broth
  • shredded Cheddar or Monterey Jack,
  • for serving
  • fresh cilantro, for serving

Preparation

  1. 1. Put the olive oil into the cooking pot of the
  2. Cuisinart® Multicooker. Select Sauté/Brown.
  3. Set the temperature to Low, and press Start.
  4. 2. Once the unit is preheated and the oil is
  5. hot, add the ginger, garlic, and onion with
  6. a pinch each of the salt and pepper. Cook
  7. until softened and the onion is translucent,
  8. about 2 to 3 minutes. Add the bell pepper
  9. and the spices and cook to meld the flavors,
  10. about 3 to 4 minutes. Add the drained beans,
  11. tomatoes, tomato paste, chipotle and sauce,
  12. broth, and remaining salt and pepper. Stir
  13. to combine.
  14. 3. Secure the lid and select Beans. Set the time
  15. for 20 minutes and press Start.
  16. 4. When the tone sounds, allow pressure to
  17. release naturally.
  18. 5. Once the pressure is completely released,
  19. carefully open the lid.
  20. 6. Taste and adjust seasoning as desired.
