The best and cheesiest quiche!! not your conventional spinach quiche. In our family its made in large quantities!!! The flavors go together perfectly great as a side dish or an entree!!!!!!
a lot, at least 6 very large servings
2½ pounds of muenster cheese sliced
3 large tubs of cottage cheese
1 egg (optional)
4 square pkgs of frozen chopped spinach

Preheat the oven to 375. In a large pot, bring spinach to a boil.
While it is cooking get a large baking pan and line the bottom with a layer of muenster cheese.
When the spinach has finished boiling put it into a colander and squeeze out all the water
In a large bowl mix the spinach, cottage cheese, and the egg mix well.
Pour spinach mixture into the baking pan with the muenster cheese, spread it out evenly then layer the remaining slices of muenster cheese over the top and bake for approx 45 minutes or until cheese turns golden brown. Serve hot!!!!
