Tuscan Salad

This is one of my favorite simple summer salads! It reminds me of the romantic trip to Italy my husband and I took on our 5 year anniversary. The food was such an amazing part of our travels, so when we returned home we made the choice to eat as we had on our travels and now every night is a culinary journey to some exotic place we have wonderful memories of. I hope you enjoy this recipe as much as we do.




Salad: 1 Pound ripe Red and Yellow tomatoes 1 Red onion 4 Navel Orange's 1 pound fresh Mozzarella Cheese Whole Fresh Sweet Basil (to taste) salt to taste (optional) Homemade Tuscan Vinaigrette Homemade Tuscan Vinaigrette: ¼ C. Olive oil 1 Tlbs. Balsamic vinegar ¼ teaspoon. Dijon mustard 1 Tbls. sugar ¼ teaspoon. salt ¼ teaspoon. fresh garlic minced

Prepare vinaigrette. In blender add all ingredients for vinaigrette, blend on high 2 minutes. Cut mozzarella into ¼ inch thick slices, dice to bite size pieces. Slice both red and yellow tomatoes ¼ inch thick slices, then into bite size pieces. Dice red onion into small pieces. Peel oranges and cut into ¼ inch thick slices, then dice into bite size pieces. Toss cheese, tomatoes, oranges and sweet basil in large salad dish. Drizzle with dressing. Serve room Temperature.
