Ingredients: 1 pound of lean turkey meat 1 cup of shredded zucchini ¼ cup diced red onion 2 eggs ¼ cup organic ketchup 1 Tbs smoked paprika 2 Tbs oregano ¾ teaspoon garlic salt Sauce: ½ cup organic ketchup 1 Tbs Dijon mustard 1 Tbs honey

Instructions

Directions: Preheat oven to 350 degrees. Hand shred zucchini, and dice red onion. Then, place ground turkey, veggies, eggs, ketchup, and seasonings into a large bowl. Stir with a wooden spoon until all of the items are thoroughly mixed. In a greased bread pan (8.5’ X 4.5” X 2.75”), put the turkey mixture in, smoothing out the top using the back of a fork. Then, in a bowl, put sauce ingredients and mix well with a spoon. Next, put sauce over the top of meatloaf. Bake meatloaf at 350° for at least 50 minutes- 1 hour. Use a knife to check the middle of the meatloaf for doneness. Center of meatloaf should be set and an internal temp of 155 degrees. Check every five minutes until middle is cooked through. Let sit at least ten minutes before serving.
