Turkey Enchiladas

Turkey enchiladas are so delicious!

Ingredients

2 cups shredded Monterey jack cheese 8 oz block of Pepper jack cheese (sliced into 16 sections) 1 lb pack of ground turkey or sliced turkey 1 pack of taco seasoning 8 oz can of chopped chilies 28 oz can of enchilada sauce 1-8 count pack of enchilada shells

Instructions

Preheat oven to 350 degrees, and start cooking turkey in skillet. Add taco seasoning and chilies and ¼ cup of water. Cook turkey until done, about 10 minutes. Divide in pan into 8 sections. Open sauce and pour about ½ cup in bottom of 13X9 cake pan to cover bottom of pan. Take each enchilada shell and layer and row of meat and two slices of pepper jack cheese, just off center. Roll up burrito style and place in cake pan. Continue with the last 7 and then pour the remainder of sauce on top and spread shredded cheese on top. Cook covered in oven for 30 minutes, remove cover and cook for 10 to 15 more minutes until cheese melted and lightly brown. Let sit for 10 minutes, cut and serve if desired with a dollop of sour cream on top and Spanish rice.
