Ingredients
1½ pounds cooked turkey, cut into thick slices ¼ cup unbleached, all-purpose flour2 large eggs, lightly beaten1 cup panko breadcrumbsKosher salt for sprinklingOlive oil for brushing1 recipe buttermilk wafflesButter for servingCranberry sauce for servingMaple syrup for servingToasted pecans for garnish (optional)
Preparation
1. Set up 3 containers for dredging – one with flour, one for the beaten eggs, and the third with the bread crumbs. Dip the turkey slices first into the flour, shaking off any excess. Next dip in the egg and then finally, coat well with the breadcrumbs. Sprinkle lightly with salt.2. Place the AirFryer Basket onto the baking pan. Coat the basket well with nonstick cooking spray. Lightly coat both sides of the coated turkey with olive oil and place into the fry basket. AirFry in the upper position with the temperature set to 400°F and cook for about 8 minutes; flip and cook for an additional 3 to 5 minutes, until evenly crispy.3. Serve “fried” turkey on top of waffles with butter, cranberry sauce and maple syrup.
