1 lb ground beef or turkey
1 C chopped yellow onion
1 clove garlic, minced
4 corn tortillas, halved
1 4 oz can of sliced green chili peppers, drained
1 8 oz can of no salt added tomato sauce
½ teaspoon pepper
Salt to taste
2 C grated jack cheese, or 8 oz
1 C pitted black olives (optional)

Preheat oven to 350. Lightly coat an 8" deep dish pie pan with non stick spray. In a large non-stick fry pan sauté meat, onion, and garlic. Break up meat with a fork and cook until meat is browned and onion is soft, about 5 minutes. Drain off fat. Add chili peppers, tomato sauce, and salt and pepper. Mix well. Simmer for a few minutes to let flavors combine.
Place 4 tortilla halves in the pie plate. Don't worry about overlap. Add half of the meat mixture followed by half the cheese. Repeat the tortilla layer and the meat and cheese. Cover with aluminum foil and bake until bubbling, about 20 to 25 minutes. Let stand for 5 to 10 minutes before serving. Cut into 6 wedges and serve with olives, sour cream, and guacamole if desired.
