Tofu “chicken” salad sandwich

This sandwich is 100% vegan and absolutely delicious!

Ingredients

Firm tofu, vegan pesto, vegan cheese, veganaise, tomato, lettuce, bread, and black pepper

Instructions

1. Squeeze tofu until all liquid is removed. Grate tofu into bowl with cheese grater. Scoop in desired amount of pesto sauce and mayonnaise. Stir and add black pepper to taste. Add a layer of mayonnaise to a piece of bread then top with your tofu mixture. Lay a slice of cheese on top and broil in toaster oven until cheese is melted. Remove from oven and top with lettuce and sliced tomatoes and enjoy! You may refrigerate the remaining tofu for up to 7 days.
