Ingredients
1 pink grapefruit, diced and all rind and membrane removed
1 ripe avocado, diced, skin and pit removed
2 slices red onion, diced
Juice from ½ of a lime
1 small handful cilantro, washed and chopped
Couple dashes of kosher salt
3 tilapia fillets
About 1 tablespoon butter

Instructions
1.Mix everything except the fish and butter in a bowl , stir well
2.Lay your fillets on a baking sheet and sprinkle some salt on each
3.Thinly slice a few pieces of butter and place on top of each fillet
4.Bake tilapia according to directions on package
5.Plate and spoon some of the salsa mixture over each
6.Serve with a lime wedge and some extra cilantro
