*1 lb of Turkey Breast Fillets *1 Slender Sweet Potato *1 Cup of Green Beans *1 Can of Baby Corn (drained) *1 Can of Jellied Cranberry Sauce *¼ Cup of Soy Sauce *¼ Cup of Water *2 Tbs Cornstarch *2-4 Tbs Peanut Oil (can substitute Olive/ Canola Oil) *Your favorite Stuffing *French Onions (for topping)
1.) Cut Turkey into bite-sized pieces 2.) Slice Sweet Potatoes thinly (can use a dice if preferred) 3.) Combine Cranberry Sauce, Soy Sauce, Water, and Cornstarch to make sauce and set aside.
4.) Heat 2 Tbs Oil in wok or large skillet (preferably a Wok) on medium-high until it starts to smoke.
5.) Add Sweet Potatoes to wok and stir fry for 2 minutes and remove from wok (not necessary if using a small dice).
6.) Add Turkey and stir-fry until mostly cooked through (about 4-5 minutes). **May need to add additional 2 Tbs of Oil** 7.) Add Sweet Potatoes back to wok and stir-fry 2-3 minutes.
8.) Add Green Beans and Baby Corn and stir-fry for 2 minutes.
9.) Add sauce mixture from step 3 and cook for an additional 2 minutes.
10.) Serve over Stuffing.
11.) Sprinkle French Onions on top.
