Thai Chicken Stir-Fry

This is a family favorite! Good with broccoli.

4 medium/large chicken breasts, cut into bite-size pieces ¾ c peanut butter (creamy or chunky) ¾ c water 3 Tbs. soy sauce 1½ Tbs. brown sugar 3 Tbs veg oil 3 or 4 cloves of crushed garlic 3 to 4 c. cut up broccoli (I use two heads)

1. In small bowl, blend peanut butter, water, soy sauce and sugar (I put mine in the blender b/c I couldn’t get it smooth with a whisk); set aside. 2. In skillet or wok, heat oil over med high heat. Add garlic and stir for 30 seconds. Now add chicken and stir-fry until firm and white. 3. Add broccoli and stir-fry 3 minutes more. Last add peanut sauce and stir constantly for about 3 additional minutes, until smooth. Serve over rice.
