Sweet Potato Stuffed Pork Chops

4 medium boneless pork chops 1 medium granny smith apple 1 (15 oz.) can of sweet potatoes (yams) 1 tablespoon. grated parmesan (like the stuff in the green shaker) 1 tablespoon. tabasco 1 tablespoon. worcestershire sauce 1 teaspoon. lemon juice 1 tablespoon. spicy brown mustard 1 tablespoon. apple butter ⅓ c. crumbled bacon ¼ teaspoon. salt ¼ teaspoon. pepper ¼ teaspoon. granulated garlic

Preheat oven to 375. Line a baking sheet with foil and set aside. Flatten each pork chop out to about ¼ inch thick. Do this by placing them one at a time in a large zip-top bag and pounding flat with a kitchen mallet. Add the sweet potatoes, parmesan, tabasco, worcestershire sauce, lemon juice, mustard and apple butter to a food processor and pulse until combined and smooth. Mix the crumbled bacon into the sweet potato puree and spread evenly onto each pork chop. Core and slice the apple into thin slices. Place 3 or 4 slices of apple on top of the mixture that has been spread on the pork chops; roll the pork chops up and secure each one with a toothpick. Place pork chops on foil line sheet and sprinkle with the salt, pepper and granulated garlic. Bake for about 1 hour.
