Pork tenderloin with pineapple sauce




1 pork tenderloin 1 can of pineapple chunks 1 can of pineapple juice ¾ cup cornstarch ¾ cup brown sugar balsamic vinegar to taste

Place the tenderloin in a baking dish and pour half of the pineapple juice over it. Cover with aluminum foil and bake for 20-40 minutes depending on size. Meanwhile, in a cool saucepan, mix the dry cornstarch and brown sugar together until blended. Now add the remaining pineapple juice and place on the stove at a medium-heat. Stir to prevent burning. When the mixture begins to thicken, add the undrained can of pineapple chunks. Stir and turn heat to low. Slowly add balsamic vinegar until the sauce tastes tangy enough for your liking. When pork is done, place tenderloin on a platter and pour a small amount of the sauce over the sliced meat. Serve the remainder in a bowl to dish over steamed rice and meat.
