Spicy Chicken Salad that is fun to eat outdoors.
2 whole skinned chicken breasts
Halved cherry tomatoes
Favorite oil & vinegar or blue cheese or ranch salad dressing
3 garlic cloves
3 tablespoon fresh chopped ginger
4 tablespoon soy sauce
⅛ cup lemon juice
1 teaspoon tabasco
3 tablespoon wine vinegar
¼ cup olive oil
½ teaspoon ground pepper
2 teaspoon salt

Preheat BBQ to medium.
Combine smashed garlic, chopped ginger, soy sauce, lemon juice, Tabasco, wine vinegar, oil and pepper in bowl to form sauce.
Cut chicken breasts into strips and place in sauce to marinade for 30 minutes.
Place chicken on BBQ grill and cook 15-30 minutes (or until cooked) turning and basting frequently.
When cooked, place on shredded lettuce with cherry tomatoes and add oil and vinegar or blue cheese or ranch dressing.
