I always had a hard time making stuffed bell peppers...they would always fall down!! I also didn't like the ratio of bell pepper to stuffing...I always ended up with way too much bell pepper! This dish is so easy to prepare and my whole family loves it!
1 lb of ground beef
3 red bell peppers cut into 1 inch pieces
1 box of long grain and wild rice
1 can of diced tomatoes
8 oz cheddar cheese

Preheat oven to 350.
Prepare the rice as directed on the box.
In a large skillet cook the ground beef. Remove the ground beef and place in a 9x9 baking dish. Using the same pan that you cooked the ground beef in, sauté the bell peppers until soft, approx. 5 minutes. Add the cooked rice, bell peppers and diced tomatoes to the ground beef and mix together. Top with the shredded cheese and cook for approx. 25 minutes.
