Steak with Summer Squash and Pine Nuts

1 1/2 pounds flank steak salt and black pepper 2 tablespoons olive oil 1/4 cup pine nuts 2 cloves garlic, sliced 1 pound summer squash, diced (about 2) 1 red bell pepper, diced 1/4 teaspoon crushed red pepper 2 tablespoons chopped fresh chives

Instructions

Heat broiler and place the steak on a broiler proof baking sheet and season with 1/2 teaspoon each salt and pepper. Broil 4 - 5 minutes per side for medium rare. Let rest 5 minutes before slicing. Heat oil, pine nuts, and garlic in a large skillet over medium-high heat. Cook for 1 - 2 minutes, stirring, until the mixture is golden, Add the squash, bell pepper, crushed red pepper and 1/2 teaspoon salt and cook for about 4 to 5 minutes, stirring often, until the vegetables are tender. Sprinkle with chives.
