Steak with jalapeno rice

Mildly spicy with a punch of jalapeno flavors.




1 pound top round steak 1 teaspoon salt 2 medium onions 4-5 pickled jalapeno slices or 2 fresh jalapenos chopped finely 2 teaspoons chili powder 1 teaspoon garlic powder 1 cup long grain rice ½ cup beef stock

1. Peel and chop onions into cubes. 2. Heat 1 table spoon vegetable oil in a pan until sizzling hot. Season steak with salt on both sides and sear on both sides for two minutes on each side. Transfer on a plate. Turn down the heat to medium and Add onions and jalapenos, chili powder and garlic powder. Stir and cook for 5-7 minutes until soft. Put the meat back to the pan, add ½ cup stock or water and cook for 15 minutes with a closed lid. 3. Transfer meat on a plate and put aside. Add rice to the same pan and fill it up with just enough water to cover the rice. Season with salt to your taste. Cook over medium-high heat with open lid until water evaporates (about 10 minutes). Turn the heat down on low and put the meat on top of rice, close the lid and cook for 10-15 minutes more. Serve.
