Sriracha Salmon

Spicy Pistachio encrusted Salmon with a warm bean sprout salad.




2 8 ounce salmon filets 2 tbls sriracha chili sauce ½ cup unsalted pistachios 2tablespoon peanut oil 1teaspoon garlic 1teaspoon shallot 2tablespoon chili oil 1tablespoon rice wine vinegar 1tablespoon ponzu 2 tablespoon chopped chives 8 ounces bean sprouts 8 ounces of Soba noodles cooked

-Coat the salmon in sriracha -then pack the salmon in the pistachios -heat peanut oil in pan and sear the salmon, flip and finish in 375' oven til desired degree of doneness -remove fish from pan add chili oil and heat -add garlic, shallots, and chive saute til fragrant and shut off fire -add rice wine vinegar and ponzu and bean sprouts -toss the sprouts in the vinaigrette -place cooked Soba noodles on plate put your salmon on top and pour bean sprout vinaigrette over the top and enjoy!
