Spinach stuffed flank steak

A flank steak stuffed with spinach, onions, garlic, parmesan cheese and fresh herbs and wrapped in bacon and then grilled to perfection.

1 flank steak pounded out thin ½ onion 1 clove fresh garlic 1 pkg. frozen spinach, thawed and excess water squeezed out 1 Tbs. grated parmesan cheese Fresh chopped parsley 1 Tbsp. & ¼ teaspoon. fresh thyme Salt & pepper to taste

Instructions

Chop onion, garlic, cheese in Cuisinart mini food processor using the pulse feature. Remove from processor and combine w/ spinach and herbs in bowl. Place mixture in center of steak and spread out lengthwise being careful not to overstuff. Season w/salt & pepper. Roll up, jelly roll fashion, lengthwise, and wrap strips around beef. Loosely tie butchers string around meat. Grill beef on pre heated grill approx. 8-10 minutes for medium rare. When cooked to taste, let rest for 5 minutes and remove twine, slice in individual serving portions and serve with baked potatoes and a fresh garden salad. Enjoy!
