We think of Indian food as a wonderful complexity of exotic ingredients requiring long cooking times and an undertaking which is best left to others but most ingredients in this recipe are found in most kitchens! These chicken wings are spicy and delicious and are ready to eat in 90 minutes!

4 pounds chicken wings, drumettes and flats separated, tips discarded 16 garlic cloves, chopped 2 tablespoons vegetable oil 1 stick butter 4 tablespoons chili red pepper flakes 2 tablespoons turmeric powder 3 tablespoons cumin 3 tablespoons ginger powder 6 tablespoons dark brown sugar 2 cups yogurt 2 cups tomato puree 1 teaspoon salt 1 teaspoon black pepper Garnish: 4 green onions, thinly sliced

Instructions

Preheat oven to 375 degrees. In a large skillet, combine vegetable oil and butter until melted over medium heat. Sauté garlic, then add turmeric, cumin and ginger and stir for 1 minute. Add all remaining ingredients except chicken, stir, then simmer over low heat for 10 minutes, stirring often. Toss in the chicken wings until well coated. Transfer to a foil-lined, large, lipped baking sheet so the wings are not touching. Bake for 1 hour, or until nice and crispy. Sprinkle with sliced green onions.
