This recipe can be made the night before. Otherwise cooking time is minimum 4-6 hrs depending on Crock Pot settings. It is recommended that you only add chili powder 1/2 tsp at a time until the desired taste is reached. For milder chili, use less chili powder, for spicier, more.
1 large can of diced green chilies
1 lb hamburger or ground sirloin (preferably chili grind)
2 tablespoon olive oil
½ cup freeze dried diced onions or 1 large onion, diced
2 large cloves garlic minced
1 tablespoon salt
2 cans stewed tomatoes
3 cans seasoned chili beans
½ teaspoon to 1 tablespoon fresh chili powder(more or less depending on taste)
1 teaspoon cumin
⅔ cup ketchup
4 oz canned tomato paste (½ can)
1 large bag of corn chips
shredded cheddar cheese for topping

Fry hamburger, seasoned with salt and olive oil in large frying pan. Add garlic, onion if it's fresh, and canned green chilies. Cook until hamburger is browned and onions tender.
Into Cuisinart Crock Pot add hamburger mixture and remaining ingredients, except for Corn Chips and Cheddar Cheese. Stir well mixing in all ingredients, especially tomato paste. Place Crock Pot on high setting, timer set for 4-6 hrs, stirring chili occasionally. Chili will thicken as it cooks. When done, turn down heat setting to low.
Serve with Corn Chips and Cheddar Cheese.
