Smoked-Bacon and Manchego Frittata

Ingredients

5 slices applewood-smoked bacon, cut into small dice ½ large red bell pepper, cut into ½-inch pieces ¼ large red onion, cut into ½-inch pieces 10 large eggs ¼ cup heavy cream ½ teaspoon sea salt ¼ teaspoon freshly ground black pepper nonstick cooking spray 4 ounces manchego, shredded 8 green onions, chopped

Instructions

Preheat oven to 375°F. Combine bacon, red pepper and red onion in a small microwave-safe bowl. Cover with a paper towel and cook in a Cuisinart® microwave on High for 10 minutes. While the bacon and vegetables are cooking, put the eggs, cream, salt and pepper into the jar of your Cuisinart® PowerEdge® 1000 Watt Blender. Add the cooked bacon/vegetable mixture. Auto Pulse on Low for 8 to 10 seconds, or until combined. Liberally spray a 12-inch sauté pan with nonstick cooking spray. Add the blended egg mixture to the pan; top with the manchego and onions. Place the filled pan in the preheated oven; bake for 5 minutes. After baking, let frittata sit for 5 minutes before slicing and serving.
