2 lbs of ground turkey/ beef (shrimp may be added)
4 sun dried tomatoes, diced
1 cup of ketchup
¼ cup of Worcestershire
½ cup of bread crumbs
1 package of onion soup mix
⅔ cup of extra virgin olive oil
½ onion (cut in ¼ inch thick pieces)
½ green pepper (cut in bite-size pieces)

Preheat oven to 375
Combine turkey, sun dried tomatoes, ½ cup ketchup, bread crumbs, egg, onion soup mix, ⅓ cup olive oil, onion, green pepper, Worcestershire sauce, and black pepper and mix in Cuisinart stand mixer.
Pour ⅓ cup olive oil into casserole dish/ baking pan and place the meatloaf into the baking pan. Spread the remaining ketchup over the meatloaf and place the pan into the oven to bake.
Cook through (approximately 45 minutes to an hour)
