Shrimp scampi served in a wrap
1 pkg 10" flour tortillas
1 3/4 lb. shell on med-large shrimp
1/2 head large romaine lettuce, chopped.
2 chopped green onions
handful of torn cilantro
1/8 to 1/4 teaspoon red pepper flakes
lemon juice to taste
1 1/2 - 2 tablespoons canola oil
2 large grated garlic cloves
3/4 teaspoon salt
1/2 teaspoon pepper

Dry shrimp well and place in bowl.
Add grated garlic, salt, pepper, oil and red pepper flakes.
Broil 4-5" from element for about 3 minutes.
Turn and broil another 2-3 minutes.
Cool, peel and set aside.
In a bowl combine chopped lettuce, green onion, cilantro, lemon juice, oil and just a touch of salt.
Toss, add shrimp and toss all.
To assemble, make a cone with a tortilla by placing it in a tall glass.
Fill with shrimp mixture, add a lemon wedge and serve.
