Shrimp Burgers with Avocado & Garlic Aoli

Ingredients

• Shrimp Burgers:
• 1 lb. medium shrimp, shelled & deveined
• 1 egg
• 2 Tbl. Chopped cilantro
• 1 Tbl. minced garlic & 1 small onion, diced
• ½ cup seasoned panko breadcrumbs
• ½ large jalapeno, seeded and chopped
• 1 teaspoon salt
• 1 teaspoon pepper
• ⅓ cup red pepper, diced & 1 cup canned french fried onions.
• Avocado & Garlic Aoli:
• 1 avocado, halved, seeded and peeled
• ¼ cup sour cream
• 1 tbl. fresh lime juice
• 1 tbl. minced garlic
• ½ jalapeno pepper, seeded and chopped
• 2 tbl chopped cilantro
• 1 teaspoon. ea. salt and pepper

Instructions

1. Avocado & Garlic Aioli:
2. Scoop the avocado pulp into the bowl of a food processor.
3. Add the sour cream and remaining aioli ingredients.
4. Process until smooth.
5. Adjust seasoning if needed.
6. Place in a bowl and cover with plastic wrap touching aioli and refrigerate.
7. Burgers:
8. Divide the shrimp in half.
9. Coarsely chop one half of shrimp and set aside.
10. Place remaining half of shrimp in food processor and pulse til it's coarse puree.
11. Add egg, onion, cilantro, jalapeno and garlic to processor and process until smooth.
12. Add breadcrumbs and process again.
13. Add coarsely chopped shrimp and read pepper and season with salt & pepper.
14. Mix well and form into 4 burgers. Chill for 1 hour.
15. Heat oil in heavy skillet and once hot, fry the burgers until golden on each side, about 3 mins. per side
16. Drain on paper towels.
17. Serve shrimp burgers on brioche buns, top with avocado aioli and then french fried onions. Serve immediately.
