Instructions

In a large sauce pan, melt the butter and add the flour stirring constantly with a whisk until the flour is cooked out and the mixture turns light tan. Add the milk slowly to the flour mixture stirring constantly with a whisk until smooth and begins to thicken, about 10 minutes. Add the Parmesan cheese and salt and pepper to taste. Continue on low simmer, adding additional milk if needed. When ready the sauce should coat the back of a wooden spoon for the right thickness. Meanwhile, In a medium dutch oven over medium high heat, brown the Chorizo until cooked through, about 5 minutes. Remove Chorizo to a plate and set aside, leaving the oils from the Chorizo in the pot. Add Olive Oil to the dutch oven (if needed) then add the onions and peppers and cook until lightly browned and softened, about 5 minutes. Add garlic and cook 1 minute. Lastly, add the shrimp and cook until just pink, return the Chorizo to the dutch oven. Turn heat off of the sauce, and add to ingredients in the dutch oven. Add the hot sauce of choice and simmer until the Fettuccine (or pasta of choice) cooks to al dente according to package directions. Once pasta is cooked, drain and add to the sauce, mix well to combine. Serve topped additional Parmesan cheese with a side salad and crusty bread. Enjoy!
