Shrimp & Snow Pea Salad

Refreshing and delicious main dish salad, perfect for a casual supper or ladies' lunch.




2 tablespoons finely chopped green onions 2 tablespoons chopped fresh cilantro leaves 2 tablespoons wine vinegar 1 tablespoon lime juice 1¼ teaspoons minced fresh ginger root ½ teaspoon minced garlic 1 teaspoon sugar and a pinch of salt ½ cup canola or vegetable oil 10 ounces fresh snow peas, ends trimmed 1 bunch leaf lettuce, trimmed, washed and spun dry, torn into pieces ½ red bell pepper, seeded and cut into thin strips 1 pound medium boiled, peeled, and deveined shrimp, and chilled ¼ cup chopped dry roasted peanuts, garnish

Blanch snow peas in a pot of boiling water for 45 seconds or until bright green. Remove with slotted spoon and plunge in ice water bath. Set aside. Combine green onions, cilantro, vinegar lime juice, ginger root, garlic and salt in a blender or beaker, using a stick blender. Blend 20 seconds or so until ingredients are finely minced and blended. Add oil in a slow stream, blending until emulsified. Toss drained pea pods with remaining ingredients (except peanuts) in a large bowl. Add dressing to coat. Divide among serving bowls and garnish with chopped peanuts.
