2 Flounder Fillets
1/2 Pound of Baby potatoes
1/2 Pound of Cherry Tomatoes
Pinch of Salt Pepper
Thyme and garlic
Drizzle of Olive Oil

Dry the Flounder fillets with paper towel, season each side with salt and pepper.
Sprinkle Flour on both sides.
In non stick pan heat the olive oil, garlic and thyme over medium high heat, until the oil ripples then place the flounder fillets for about 2 minutes each side.
For the smashed baby Potatoes, Preheat the oven to 425 degree F
Put baby Potatoes in large pot covered with salted water and cook until tender, then drain well.
Place the baby Potatoes in baking sheet, carefully smash them with the back of spoon or fork ( make sure they stay in one piece). Season with salt, pepper thyme and drizzle of olive oil.
Place in the oven until golden brown.
