Tasty fish with a bit of a kick!
4 tilapia filets
½ green and red bell pepper
½ of a large onion
2 large serrano chilies
7 large limes
¼ cup lemon pepper seasoning
1 tablespoon of whole cumin
1 cup of water
salt & pepper
white rice or 1 head of iceberg lettuce

In a large pan add water and fish
Add cumin and ½ of the lemon pepper
Slice bell peppers into thin strips
Remove 3 slices of each and set aside. Put the rest in the pan
Cut onion into small strips. Remove 10 strips set aside and place the rest in the pan.
Quarter one tomato and put in the pan.
Do a once around of olive oil and turn on medium heat for 5-10 minutes or until most of the water is gone.
Cut the rest of the veggies, chilies and cilantro into small pieces and mix together with the juice of one lime.
When the water is almost gone add the rest of the lemon pepper to the pan and spoon on an even amount of salsa on top of each fish and add the juice of 4 limes to the pan as well.
Cover the pan and cook one low for 5 minutes.
If you want to eat with rice cook rice and serve.
If you want to eat with lettuce, shred the lettuce in a strainer. Add 1 teaspoon of salt and 1 tablespoon of pepper and the juice of one lime. Mix together.
Place rice or lettuce on a plate then place fish and veggies on top and ENJOY!
