The Mexican style spicy salsa, along with the rich taste of salmon makes this a perfect dinner. It is easy to make, plus it’s a low calorie food for those on a lower diet.

Preheat a 10-12 inch pan over medium high heat for about 2-4 minutes (time is different depending on your oven). Rub salmon with the left over fresh lemon juice and add a little salt and white pepper. Place salmon in the pan. Cook for 5 minutes. Turn and cook for another 5 minutes. Add salsa and serve topped with mint salsa. *Make sure that you do not cook salmon for more then 15 minutes, as it will be overcooked.
